with Tipsy Fruit Gins
White bread or brioche, sliced
Mixed fresh summer fruits. E.g. strawberries roughly chopped, raspberries, redcurrants, cherries (stoned)
Castor sugar
Tipsy Fruit Gin (raspberry or cherry)
Line a pudding basin with the bread or brioche, dipped in Tipsage Farm Fruit Gin.
Mix the fruits with sugar to taste, and add Tipsy Fruit Gin.
Put the fruit in the lined basin and cover with undipped bread or brioche.
To press it, put a saucer or plate on top, with a one-pound (500gm) on it. Leave in the fridge for 24 hours.
Turn the pudding out and serve with whipped cream. For extra luxury, whip the cream with castor sugar and even more Tipsy Fruit Gin.
Quantities depend on the number of gluttons and the size of the pudding basin.
